Yield: Makes 6 servings.
2 | cups | (8 ounce) elbow macaroni | |

1 | cup | mayonnaise | |
|
|||
1/4 | cup | light cream | |
|
|||
1 | cup | sliced celery | |
|
|||
1 | Tablespoon | minced scallions | |
|
|||
1 | Tablespoon | minced crystallized ginger, if desired | |
|
|||
1 | teaspoon | salt | |
|
|||
Dash pepper | |||
|
|||
2 | cups | diced cooked turkey | |
|
|||
1 | cup | seedless grapes, cut in half | |
|
|||
1/2 | cup | coarsely chopped walnuts | |
|
|||
Salad greens | |||
|
|||
Dried cranberries | |||
|
Cook macaroni as directed on package; drain. Rinse with cold water; drain again.
Meanwhile, in large salad bowl stir together mayonnaise, cream, celery, scallions, ginger, salt and pepper.
Add macaroni, turkey, grapes and walnuts; mix lightly. Serve on individual plates over greens. Garnish with dried cranberries and additional grapes and walnuts, if desired.
